Title: Apple Streusel Coffee Cake

Yield: 12 Servings

  Batter:
1/2cButter or margarine; softened
1cPacked dark brown sugar
1 1/2tsVanilla extract
4lgEggs
2tsBaking powder
1tsBaking soda
2cFlour
8ozSour cream; (i used low fat.)

APPLE MIXTURE: 5 medium Granny Smith apples (or other tart apple) -- peeled, cored,sliced 1 tablespoon sugar 1 1/2 teaspoons cinnamon -- or to taste 1 teaspoon lemon juice

STREUSEL FILLING AND TOPPING: 3/4 cup packed dark brown sugar 1/2 cup sugar 1 tablespoon flour 1 tablespoon cold butter or margarine 1 cup chopped walnuts -- (optional)

OVEN: 350

BATTER:

1. Grease and lightly flour a 10-inch bundt or tube pan.

2. Cream together butter (or margarine) and brown sugar. Add vanilla.

3. On medium speed, beat in eggs, one at a time and continue to mix until well combined.

4. Mix together dry ingredients; add to batter alternately with sour cream.

APPLE MIXTURE:

1. Toss apple slices with cinnamon, sugar and lemon juice until well combined; set aside.

STREUSEL FILLING and TOPPING:

1. Mix together sugars and flour.

2. Work in butter (or margarine) with your fingers until mixture resembles streusel. Stir in nuts, if using.

ASSEMBLY:

1. Place 1/3 of streusel mixture on bottom of pan followed by half of batter.

2. Layer half of apple slices on top of batter.

3. Place 1/3 of streusel evenly over apples followed by remaining half of batter.

4. Layer remaining half of apple slices over batter.

5. Sprinkle remainder of streusel on top.

6. Bake approximately 50 minutes or until toothpick inserted into center comes out clean.

7. Cool in pan 20 minutes and remove.
